To speak about Tequila and Mezcal is like to go into the roots of the the Mexican soul. The Maguey is cosmological plant, even origin of the national name: metl-ixtli: "in the maguey navel"; some- thing like if all the Mexicans had sprouted from this
prodigious plant. The Nueva España chroniclers said, referring to this botanical species that: she gives water and wine and oil and vinegar and honey and syrup and thread and needle and other hundred things... No astonishes that the own Guadalupe Virgin reflected her miraculous image in an ayate knitted with maguey fibers, and that appeared encircled for a kind of leafs from this same plant, and that she has to its feet the Moon that represents the divine and aquatic origin of Mayahuel; the goddess that was immolated to be born as this plant. For that reason the Tequila is much more that an alcoholic drink or a simple distilled, it is a kind of Ambrosia or divine Nectar in all similar to the one that they promised paradises in other religions or beliefs.
